Back in 2002 when my husband and I were planning our wedding I was looking online for ways to shed those extra pounds. I found an article about juicing and was intrigued. I added the Waring Pro juicer to our registry, thinking we’d be juicing every day.
Fast forward ten years….
After my Mom passed away from lung cancer I began observing my eating habits very closely. Although I have been a vegan for almost eight years (with the occasional weakness for a cheese pizza :-)) I often had bouts with lethargy and irritability, even with taking supplements and exercising regularly.
There are many blogs and articles about juicing, but I didn’t take to them right way. The thought of spinach or kale juice made me nauseous until I saw Karen Knowler’s YouTube video on green juice. Then, the journey began…
As much as I love my vegetables, I couldn’t see myself eating a bag of carrots, kale, cucumbers, etc. in one day, so what better way to combine all into one drink? In my previous blogpost, “The Green Juice Experience” my husband and I made our first concoction and it was scrumptious. A few minutes after drinking the juice I felt a jolt. My energy shot through the roof as did my metabolism. At first I thought it may have been from the 1 1/2 cups of coffee I had earlier, but this feeling was very different – no jitters, no heart palpitations. Most importantly, I felt a deep connection with the fruits and vegetables I was preparing. After all, these fabulous foods are provided by our Mother Earth.
It’s been two weeks since we’ve started juicing and I must say it has become a wonderful addition to my daily routine. I’ve even reduced my coffee to one cup a day and looking forward to a life without it.
I tried this green juice a.k.a. vitamin C blast the other day and I am absolutely HOOKED!
- 2 granny smith apples
- 1 large pineapple
- 5 bunches of kale
- 1/2 lemon
